Vegan Ambrosia Salad

Ingredients

☁️ 2 large bananas, sliced

☁️ 1 1/2 cups halved red grapes

☁️ 1 cup blueberries

☁️ 1 cup peeled tangerine pieces

☁️ 1 cup mini marshmallows

☁️ 1 1/4 cups vegan whipped cream, ideally the frozen tub kind, thawed


Instructions

In a large mixing bowl, combine all fruits and marshmallows, then add the whipped cream, and fold gently until everything is evenly coated. Refrigerate until chilled and serve cold. Will store in the refrigerator for 3 to 4 days.

Notes

☁️ This salad would also be great served in an 8x8 dish, smoothed into a layer, and topped with finely chopped graham crackers.

☁️ Change up the fruit depending on the season! In the summer this would be great with peaches and dark cherries, instead of blueberries and tangerines.
