- 1 10oz bag of Dandies Marshmallows
- 2 Tablespoons coconut oil
- 2 Tablespoons vegan margarine (we like Earth Balance)
- 5 cups Crisp Rice Cereal
- 1/2 cup raspberry preserves
- 1/2 cup unsweetened Coconut flakes
- A handful of fresh mint leaves
It looks like a savory pizza but it tastes like a delicious refreshing treat, perfect for those Spring and Summer months. It’s our classic Dandies crispy treat recipe topped with raspberry preserves, toasted coconut, and beautiful fresh mint leaves.
In a microwave safe bowl, combine Dandies, vegan margarine, and coconut oil. In 30 second intervals, with a quick stir between each, microwave until marshmallows are fully melted. Mix in cereal and stir until evenly coated with marshmallow cream. Press mixture into a round pizza pan. While the crispy treats cool, make the toasted coconut. On a stove, place coconut in a pan over medium heat. Toss until lightly browned. Remove from heat. Spread the preserves over the rice crispy treats and then sprinkle on the coconut. Top with fresh mint leaves. Enjoy!
