- 1 bag Dandies Mini Marshmallows
- 2 sleeves of Nabisco Original graham crackers or another vegan cookie alternative
- 6 Tbsp vegan margarine (we like Earth Balance)
- 1 can coconut milk
- 1/3 cup cocoa powder
- 1 bag dark chocolate chips
- 3/4 cup sugar
- 1 tsp vanilla
- 2 Tbsp flour
S'mores and pie are both equally rad desserts. Combining the two is a clear victory for the world!
Preheat oven to 350 degrees. In a food processor, pulse graham crackers / cookies and butter until finely blended. Grease a pie pan and press in crust mixture. Bake for 10 minutes.
In a pot turned on low heat, combine coconut milk, cocoa powder, and chocolate chips, sugar and vanilla. Stir frequently until chips have melted and mixture is smooth and free of lumps.To thicken the filling, add a Tbsp of flour (one at at time) and let simmer for a minute. Remove from heat and pour filling over pie crust and cover with plastic wrap. Let chill in refrigerator for an hour or two. Remove plastic wrap and top with Dandies Marshmallows. Using a kitchen torch, toast them Dandies! Keep pie refrigerated until ready to enjoy.
